Lentil Soup Recipe:


  • 1 cup dried lentils, rinsed and drained
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh lemon wedges for serving
  • Fresh cilantro or parsley for garnish


  1. Sauté Vegetables:

    • In a large pot, heat olive oil over medium heat. Add chopped onions, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are softened.
  2. Add Lentils:

    • Add rinsed and drained lentils to the pot. Stir to combine with the sautéed vegetables.
  3. Pour in Broth:
